Ingredients
- 4 Servings Udon Noodles (2 packets of 14.2 oz)
- 2 Tablespoons Vegetable Oil (may be substituted with other oil)
- 1 Tablespoon Minced Garlic
- 2 oz Bella Mushrooms
- 1 Medium Carrot, Shredded
- 4 Leaves Fresh Green Cabbage, Chopped
- 1 Green Bell Pepper, Thinly Sliced
- 6 oz your choice of meat or seafood
- 1 Green Onion (white portion), Finely Chopped
- 2-3 packets Bonito Flakes (as preferred)
- Black Pepper to taste

Sauce Ingredients
- 4 Tablespoons Soy Sauce
- 3 Tablespoons japanese Sweet Soy Sauce
- 1.5 Cups Water

Instructions
1. Prepare Udon Noodles by loosening and blanching them in hot water for 1-2 minutes until tender. Drain and set aside. Prepare sauce mixture and also set aside.
2. Heat oil in a large pan. Add minced garlic, mushrooms, shredded carrot, chopped cabbage, and green pepper. Stir fry until vegetables are tender yet crisp.
3. Push the vegetables to the side of the pan and add your choice of meat or seafood. Cook until fully cooked. Mix in the vegetables.
4. Pour the sauce mixture over the stir fry. Mix well ensuring everything is evenly coated.
5. Add the blanched udon noodles to the pan. Toss everything together until noodles are well coated with the sauce and heated through.
6. Sprinkle bonito flakes over the stir-fry, letting their smoky essence enhance the dish. Season with black pepper to taste. Garnish with green onions if desired. Serve hot!
