We've created a quick and nourishing recipe that incorporates our new line of Sprout Powders! This dip would be a great hors d'oeuvre at a dinner party or a great snack for kids, thanks to the fun color and its nutrient density.
Ingredients
- ½ tbsp. of Superfood broccoli powder
- ½ tbsp. of Superfood alfalfa powder
- 1 beet, chopped and roasted*
- 1 parsnip, chopped and roasted*
- Juice from ½ lemon
- 3 tablespoons of tahini
- 2 cloves of garlic
- 1 cup white beans
- 1 cup garbanzo beans
- Healthy drizzle of extra virgin olive oil (EVOO)
- Warm water to thin, as needed
- Salt and pepper to taste
Method
1. Preheat oven to 375
2. Thinly chop beets and parsnips
3. Drizzle beets and parsnips with EVOO, salt and pepper. Stirring occasionally to make sure they roast evenly
4. The veggies are ready when they are easily pierced with a fork ~20-25 min, depending on the thickness
5. Add everything into a food processor or blender and blend until it is smooth
6. Serve with carrot sticks, crackers, or use as a spread on your favorite sandwich
