Ingredients
- 1 pkg Polska Kielbasa Sausage
- 1/2 Head Cauliflower
- 1 Medium to Large Sweet Potato
- 15-20 Brussels Sprouts
- 1-2 Broccoli Crowns
- Olive Oil
- Salt to taste
- Pepper to taste
- Optional: Green Chili Or Other Seasoning Powder
Instructions
1. Preheat the oven to 400F.
2. Wash and prepare all vegetables. Cut cauliflower and broccoli into small bite sized pieces. Half or quarter the brussels sprouts. Skin and cut the sweet potato into 1/2 in cubes. Add all vegetables to a bowl. Drizzle and toss with olive oil. Add salt and pepper. Once evenly coated with olive oil spread the vegetables across a sheet pan. Sprinkle with green chili powder if desired.
3. Cut the Polska Kielbasa sausage into 1/4 inch slices and spread across the sheet pan.
4. Bake for 30-40 minutes, turning/stirring half way through.
