INGREDIENTS:
- 1 cup of quinoa
- 2 cups of water
- Half of red onion diced
- 2 tomatoes diced
- Half of a jalapeno diced (optional)
- 1 green onion diced
- 1 large avocado diced
- 1 can or fresh kernel corn cooked
- 1 can or 1 cup of black beans cooked
STEPS:
Add the quinoa to the two cups of water and bring to a boil. Once its boil cover your pot and continue cooking the quinoa in low heat for 10 more minutes. Remove from heat, remove lid and let it cool down.
While is cooling down add to a big mixing salad bowl all your veggies deiced. Add the cool down quinoa and blend well all together. Season with red wine vinegar or white, olive oil, and salt all up to your preference of amount. And last add a handful of chopped up cilantro and blend all together one more time. Bonn appetite!
NOTE: This could be done with any color quinoa
