Alternately, the mature plant can be lifted, cut back radically, and a new growth bud is forced in darkness. This is usually done in the winter and often forced indoors. These blanched buds are often called chicons. This process is a bit technical and time-consuming, more than we can get into here, but the forced chicons are a gourmet treat!
