Cardoon (Cynara cardunculus) are most popular in Europe where they are added to many dishes, and are gaining popularity in the U.S. plants grow 42" tall and produce thick and fleshy white stalks that can be eaten when cooked. Roots can also be used in dishes like parsnips. Stalks look similar to artichokes and have a taste similar to a mild artichoke when cooked.
