Hubbard is a winter squash that comes in many colors and usually has a flattish round shape that tapers to a point on one or both ends. Hubbards have thick bumpy or warty skin. They can come in a variety of sizes but can grow to 20 lbs in ideal conditions. Called Hubbard after the farmer who first brought these heirloom squashes to the USA from the Caribbean. Hubbards have the mildly sweet, buttery flavor common to winter squashes, but the texture is often described as grainy. They are commonly used in soups and purees. They will store for many months if kept in a cool, dry place.
