Delicata Squash (AKA: Bohemian Squash, Peanut Squash, Sweet Potato Squash) is an elongated cylindrical winter squash that is most often of a pale yellow or pink color with green pinstripes. Unlike most winter squashes, the skin of the delicata varieties, while thick, is edible. So the delicata is favored in cases where you want a winter squash without the hassle of peeling or scooping out the husk. The flavor and texture are similar to the butternut varieties, so think of it as butternut without the thick rind.
