Sprouting radishes are varieties grown for their leaves or as sprouts and microgreens, instead of the root. While some varieties of sprouting radishes also do produce a full-sized root, we classify them as sprouting if they are most commonly grown for microgreens or leafy greens. When grown for sprouts, they are ready in 2 to 3 days. When grown for microgreens they are ready in 8 to 12 days. For baby leaf, it is usually around 20 days. Note that pretty much any radish can be grown for microgreens, sprouting radishes are usually favored for this application.
